Banana And Chocolate Cake
(Use either imperial or metric units - don't mix)
Ingredients: 175g / 6oz soft margarine, 225g / 8oz granulated sugar, 2 large ripe bananas, ½ tsp / 2.5 ml vanilla essence, 275g / 10oz self-raising flour, ½ tsp / 2.5ml salt, ½ tsp / 2.5ml bicarbonate of soda, 3 eggs, 50g / 2oz dark chocolate chips (or broken pieces from a bar).

For the crumble topping
1 rounded tbsp plain flour, 1 rounded tbsp Demerara sugar, Knob of butter.

Method: Pre-heat the oven to 160?C/325? F/Gas 3.
Grease and line a round 21cm / 8" cake tin. Place margarine and sugar in a saucepan over a low heat until margarine has just melted. Remove pan from heat.
Peel bananas, weigh 225g / 8oz and place on a plate with vanilla essence; mash until smooth.
Sift self-raising flour, salt, bicarbonate of soda into pan and mix with a wooden spoon. Beat eggs and add to pan with banana; mix well. Stir in chocolate chips (do not over-mix). Place mixture in prepared tin and level top with a metal spoon.
Place plain flour, Demerara sugar and butter in a basin; cut up butter and work in with fingertips until mixture resembles fine breadcrumbs. Sprinkle over mixture in tin.
Bake cake in centre of oven for 1 hour 40 minutes to 1 hour 50 minutes. Test by pressing with the fingers. If cooked, the cake should spring back and have begun to shrink back from the side of the tin. Leave cake to cool in tin then turn out and remove paper. Wrap cake in foil and store 2 or 3 days to allow flavour to develop. The cake will keep well for 3 weeks if kept wrapped in foil in tin.

The Train
The train is leaving London Station
Heading for its destination
Clickety-clack; There's no turning back,
The wheels go thundering down the track.
Passing by villages and small sleepy towns
A tunnel approaches under the Downs.
Out from the darkness into the light,
The end of our journey is almost in sight.

From a poem by Paula Shortland
